Sausage and Colcannon Bake


If you read my last post, you will be aware that I love Pinterest. It's the best social media platform to get inspiration for anything and everything. I was scrolling through recipe ideas the other day when I came across this one that seemed like a delicious, warming home cooked meal. The original recipe is from Kitchen Sanctuary, and everything she makes looks insanely delicious!! (Her links are below).



Now, here is my version of this dish...


What you need:

6 Pork Sausages
Splash of Milk
4 White Potatoes
Knob of Butter
Big handful of Curly Kale
Salt & Pepper
4 Chopped Spring Onions
Mixed Herbs
1 Red Onion
Gravy
Half a punnet of Mushrooms                                                         
                             


How to:

- Peel and chop your potatoes. Boil them in a pan of water.

- Chop your spring onions and half the red onion. Put in a pan of water with the curly kale and boil.

- Chop the other half of your red onion, and chop the mushrooms too. Put in a frying pan with a drizzle of oil.

- Add your sausages to the frying pan with the mushrooms and onion. Season with mixed herbs. Fry off until brown.


- Boil your kettle and make your gravy. (I used onion gravy and made far too much because my brain can't comprehend portion control for making gravy).

- Preheat your oven to 200 degrees.

- Add the gravy to your pan of sausages.

- Once soft, drain your potatoes and add a knob of butter and splash of milk. Also season with salt and pepper and mash.

- Drain the kale and spring onions and mix into your mashed potatoes.


- Pour the sausage and gravy mix into a baking tray. (You will need a deeper one that I used because mine just exploded out of the dish and made a huge mess!)

- Add your colcannon mash on top and place in the oven for 20-30 minutes.

- Dish up and enjoy!!



My version didn't look the most appetising when dished up, but honestly it tasted delicious and Dan loved it so much, he went in for seconds. I will definitely be making this meal again.
